Our kitchen is built around a central hearth burning seasoned oak. Heat, smoke and ember are treated like seasoning: carefully measured, never loud, always present.
A clean, steady smoke gives shellfish, roots and aged beef a quiet depth without masking their character.
Menus move with coastal landings, small farms, orchard fruit and the best leaves arriving each morning.
Selected courses are carved, glazed or scented at the table so the final moment belongs to the guest.

Reservations open eight weeks in advance. Dinner is served Tuesday to Saturday from 18:00, with the final tasting menu seating at 21:15.
